Pass beef pieces twice through a meat grinder. Add salt, pepper, egg yolks, and finely chopped cilantro to meat and mix well. Form balls the size of walnuts from the meat mixture. Coat meatballs in the egg white, followed by bread crumbs and repeat. Separately, fry up sliced potatoes.

Serve meatballs and pour over the butter used to fry them in alongside fried potatoes. Serve lemon separately.

  • 200g potatoes
  • 25g clarified butter
  • 1/4 egg
  • 15g bread crumbs
  • 15g lemon
  • salt, pepper, and cilantro to taste
